Roasted Wedge Cabbage

Ingredients

Roasted Cabbage

  • 1 head of cabbage
  • 2 tablespoons of oil (olive or coconut oil)
  • Salt and Pepper to taste
  • 1 teaspoon of favorite herbs (optional)

Sweet Mustard Sauce

  • 2 tablespoons of mustard
  • 2 tablespoons of vegan mayonnaise (I used Follow Your Heart brand)
  • 2 tablespoons of maple syrup
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Slice the cabbage into 3-5 inch wedges.
  3. Oil a baking sheet with 1 tablespoon of the oil. Place the cabbage on the baking sheet and drizzle with the remaining oil.
  4. Sprinkle with sail & pepper and place in the oven.
  5. Roast for 30-35 minutes or until tender in the middle and sides are just starting to turn golden brown. Remove and serve.

Sweet Mustard Sauce

  1. Combined all ingredients in a small bowl.
  2. Mix ingredients together until smooth.
  3. Pour over cabbage and enjoy warm.
