No Bake Vegan Samoa Cookies

  • Samoa Cookie!
  • 8 Medjool dates pitted
  • 2 teaspoons water
  • 1 cup unsweetened shredded coconut
  • 1/2 gluten-free oats
  • Chocolate Dipping Sauce!
  • 2 tablespoons coconut oil
  • 2 tablespoons cocoa butter
  • 2 tablespoons maple syrup
  • 2 tablespoons cocoa powder
  • or
  • 1 cup dairy free chocolate chips + 2 tsp coconut oil


  1. In your food processor, place the pitted Medjool dates, shredded coconut, oats and the pinch of salt and a little water. Process until smooth, stopping to scrape down the sides and add a little more water if needed.
  2. Roll the mixture into balls, and flatten with your hand. Place the cookies on a waxed paper lined cookie sheet. Use a straw to poke a hole in the middle of each cookie.
  3. Place the cookies in the freezer for about 30 min.
  4. In a small mixing bowl combine ingredients for your chocolate dipping sauce or melt the dairy free chocolate chips on the stove adding 2 teaspoon of coconut oil.
  5. Dip the chilled cookies in the melted chocolate, coating the bottom with chocolate. Place on parchment paper and drizzle the tops of the cookies with the remaining chocolate.
  6. Store the finished cookies in the refrigerator. Enjoy!
