Raw Vegan Fruit Tarts
Yes, that’s right, mini pie pans! I finally get to try them out and this is the recipe to do it with. If you follow this blog them you saw that last month I announced that I was forever making my own probiotic rich coconut yogurt. After buying the So Delicious brand for so long, I decide that I’d give it a shot and make my own. I found that it was pretty easy since we have coconut meat regularly in the fridge and the homemade version is far more healthier. With that I’ve been on this coconut yogurt obsession and decided to make something a little different besides the normal yogurt parfait recipe. Like always, it was a hit!
This easy raw vegan fruit tart recipe is simple, creamy and naturally sweet. I know you guys are going to LOVE these fruit tarts! Now I prefer these as mini tarts since it makes it simpler when serving but you could also use this recipe to make one BIG pie if you like.
The crust is a simple but sweet combo of walnuts, pumpkin seeds, shredded coconut, dates, cinnamon, and vanilla. The filling is just the plain raw vegan coconut yogurt recipe that was previously posted and the toppings are completely custom to you liking. I just used whatever fruit I had at the time, luckily we always keep a good variety in the house. But if you not a fan of kiwi or pineapple, substitute it with whatever fruit your craving these days.
Why are Dates so GOOD for you?
Dates are rich in several vitamins, minerals and fiber. These delicious fruits are a good source of calcium, sulfur, iron, potassium, phosphorous, manganese, copper and magnesium which are all beneficial for health. The significant amounts of minerals found in dates make it a super food for strengthening bones and fighting off painful and debilitating diseases like osteoporosis. They are high in soluble fiber, which is often categorized as a laxative food. Dates have a high mineral content, which is beneficial for many different health conditions, but their impressive levels of iron make them a perfect dietary supplement for people suffering from anemia. Dates are also high in natural sugars, therefore, are the perfect snack for an immediate burst of energy.
- ½ cup walnuts
- ¼ cup shredded coconuts
- ¼ cup pumpkin seeds
- 1 cup dates
- 1 teaspoon cinnamon
- 1 teaspoon vanilla extract
- ½ cup coconut yogurt
- In a food processor combine walnuts, shredded coconut, and pumpkin seed and blend until finely chopped.
- Then add dates, cinnamon, and vanilla. Pulse until dough like consistency. Mold into pie dish.
- Add 2-3 tablespoons of coconut yogurt and top with fruit. Set in the freezer for 1 hour. Enjoy cold!
