Vegan Blueberry Oatmeal Pancakes

A simple & sweet vegan blueberry oatmeal pancake recipe.

Ingredients

Scale
  • 1 banana
  • 2 tbsp flax seeds
  • 2 tbsp hemp seeds
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 cup rolled oats
  • 1/3 cup gluten free flour (I used Red Mills)
  • 1 cup water
  • 1 cup frozen blueberries
  • Pinch of sea salt

Instructions

  1. In a high speed blender add banana, flax seed, hemp seed, coconut oil, vanilla, baking powder, rolled oats, gluten free flour and a cup water.
  2. Blend until a batter consistency. Add a cup of frozen blueberries into blender and fold gently with a spoon.
  3. Preheat skillet to medium heat and use a 1/2 measuring cup to scoop batter onto skillet.
  4. Cook for 2 min on each side or until golden brown.
  5. Top with fruit and/or drizzle maple syrup on top. Enjoy!

Notes

For this recipe I used my Blendtec and used that batter setting. Using the blender to mix will make this recipe a lot easier.
